Ah, back to normalcy! Christmas decorations made way for a clean and picked up space – just waiting to be filled with newness. Routine has us back and we had to get up very early compared to the holiday noon breakfasts. Coffee is a necessity on those days! And what would coffee be without sugar?! A bitter black soup. So the two need to marry, in my pot, over medium heat until they are one amber goodness. Coffee syrup! The good thing is that you can quickly make your own coffee liqueur ala Kahlua by adding booze or a latte macchiato by adding some milk or cream or coconut milk?! It’s also vegan, gluten-free, dairy free and so fits perfectly into my new diet for the next 30 days…well ok, 50% are sugar but I need to have some joy left in life after saying good bye to bread and pasta and cheese and milk 🙁
Coffee Syrup for quick and easy drinks and desserts
Ingredients
- 1 cup strong brewed coffee or espresso
- 1 cup sugar in the raw
Method
- Combine the sugar with the coffee in a pot and simmer over medium heat for about 25 minutes.
- Let cool slightly and fill into clean bottle!
I was torn between wiping the drops of syrup on the table away with a cloth or just licking it off…
Well, you know what happened 😉 I’ve got syrup in my hair now 🙂

Also, see to it that you follow the correct coffee beans and water proportion. Putting too much water and little coffee beans in the coffee maker will certainly yield a poor and “weak” brew. A general rule when brewing is to put 2 tablespoons of grounded coffee beans for every 6 ounces of water.
