I know! First I disappear, for like ever, and then I come back with this – caramels, homemade – just a few days before Christmas – how dare I?! I know! But I do dare because guys these are amazing and you could just make a batch and give the whole thing away at your Christmas party! Butter, cream and sugar – the holy trinity of baking if will – it is divine ergo it can’t be bad for you! No, no – that is the story I will stick with (Get it? Stick with! 😉 )
You will need a candy thermometer or an instant read thermometer that goes to nuclear hot! And since I don’t want to reinvent the wheel, I will just send you over to the kitchn, that has step by step instructions (with pictures) of how to make those babies. All I did was swap the sea salt for Himalayan salt – I know, right?! I’m a genius! 😛
You can wrap each caramel individually in wax paper. Or you can be lazy like me and keep the whole chunk and just cut as you go (and with “go” I mean eat!).

I made something like this, poured it into rice paper but didn’t wrap individually after cutting, vig mistake. It got stuck together, so I just melted it and made caramel syrup instead..
