I love Mexican food! If I didn’t know any better I’d say there is some Mexican blood in my genealogy somewhere. It was time to take my usual savory Mexican food cravings into a new direction, a sugar coated chocolate dipped direction to be precise. As fall is approaching with its unpleasant side of chilly winds and wetness that penetrates your bones, comforting warm snacks that can be consumed as a family while watching a movie on a Sunday afternoon are what the Doctor (a diabetic Doctor without teeth, mind you 😉 ) ordered.
Ever since living in California I knew what Churros were and have consumed my fair share of them, but I never thought about making some of my own, until I couldn’t get them anywhere once we moved to Germany. I came across this great recipe from my all time favorite recipe site allrecipes.com from a contributor named Delia. Additionally, I made a chocolate dipping sauce to make this treat worthy of a Sunday. This recipe is a basic pate chaux dough used for eclairs and other fried pastries and was really simple. I simply made some short churros so I could get away with a small pot of frying oil.
Crispy, chewy sweet Churros
Ingredients
- 1 cup water
- 2 1/2 tbsp. sugar
- 1/2 tsp. salt
- 2 tbsp. vegetable oil
- 1 cup flour
- oil 1/2 cup to 2 quarts
- 1/3 cup fine sugar
- 2 tsp. cinnamon
- 1/2 cup semi sweet chocolate chips
- 1 tbsp. whole milk
Method
- Mix the water with oil, salt and sugar and let it all come to a boil.
- Remove from heat and add the flour making it into a sticky coherent dough.
- Bring frying oil to 375F/190C temperature and using a piping bag with star attachment, pipe stripes of dough into the hot oil. Fry until golden brown and drain on a paper towels.
- Mix sugar and cinnamon on a plate and roll the drained churros in it to coat.
- Next, add chocolate chips to a microwave save bowl (I prefer glass) and melt the chocolate in small increments, careful not to over heat it. Add the milk to the melted chocolate and with a small fork blend until smooth.
- Serve warm and enjoy!
Needless to say they were gone in 60 seconds. The only thing that got my little girls over the fact that the churros were all gone was the prospect of dipping their little fingers into the left over chocolate dip. Life is good, you know!?

Now that is just way too good. Churros you can buy here but I’ve never actually made them myself, need to try that soon!
